I don’t normally like to take photos of my food for a couple of different reasons.
1.) I find it annoying.
2.) I still have yet to master the art of food photography.
But, hey, I took some photos of my food the past couple of days so you can see how much fun a low-carb lifestyle can be.
Up first? Salad.
Fridays are difficult. Since we adhere to no meat on Fridays, I find it difficult to do this diet when I can’t stand fish, and a person can only deal with so many eggs before wanting to throw the carton across the room.
Spinach (since I can’t eat lettuce, however, spinach is considered a “goitrogen,” and goitrogens are foods that suppress thyroid function by interfering with iodine uptake, so spinach should be eaten in moderation for people with thyroid issues)
1 slice of Havarti cheese, cut up
1/4 of green apple, chopped
2 Brazil nuts, chopped (I’ve mentioned how Brazil nuts have a crazy amount of Selenium and are supposed to be great for hypo people out there, haven’t I?)
1 tsp. whatever dressing you dig (I used a raspberry vinaigrette that had 9 carbs in 2 T of dressing, but I only used a teaspoon).
This salad was incredibly good.
Saturday was a Guys Game Night kind of evening at our house, so I fixed chili for the men. For myself, I quickly made taco salad without the, uh, salad since I had used the spinach the night before.
Ground beef, browned
guacamole (did you know avocados are the OPPOSITE of goitrogens? They STIMULATE thyroid function–guac it up, peeps)
pico de gallo
cilantro–because God invented Mexican food solely for the purpose of using cilantro
And whilst at the store last week, I picked up a beef roast. Now, I’m not sure what the difference between all the roast cuts are, and I would really like to educate myself, but I think I ended up with a Bottom Round Roast…? Sure. Sounds good. Anyways, I threw that in the crock pot last night at 10:30, and this morning I work up with lunch already simmering away. And when I say “lunch,” I mean enough meat to last me this week for lunch.
I threw the roast in the crock pot with a little water in the bottom (just to make sure nothing burned), some salt, cumin, and chipotle chili powder. This is my feeble attempt at Barbacoa Beef like Chipotle serves.
Oh. my. goodness.

Um, it was absolutely wonderful, and I can’t wait to eat it every single day for lunch. SO good.
Breakfast every day has consisted of two eggs and two pieces of bacon crumbled over it.
Snacks have consisted of cheese, almonds, Brazil nuts, salami, prosciutto (someone gave us a pound of it for free. It’s like gold sitting in my fridge.), sugar snap peas, and green apples in moderation.
Drinks? Water. Yep. Just water.
Sweets? I bought a 90% cacao chocolate bar at the store the other night, and I let myself have a microscopic piece if the sweet cravings start kicking in. And I also bought some cocoa-dusted almonds, and I let myself have ONE of them if a sweet craving kicks in.
